And here’s one for you veggie lovers. Roasted Brussels sprouts “mufaletta” salad. Roasted Brussels sprouts tossed with red wine vinegar, good olive oil, provolone chunks, salami, and chopped green olives. This was sooooo good!

How bout this roasted Mexican spiced chicken? I seasoned it with salt, pepper, onion and garlic powder, chili powder, cumin, oregano, and smoked paprika. I then shredded this up to make homemade chicken tortilla soup

Also made some homemade minestrone. This was good. Lots of veggies, hamburger meat, and noodles for carbs plus fresh veggies. I like soups and stews for meal prep because they re heat really well unlike dry chicken breast

I love marinating pork for 3 days and roasting it w/ good applewood smoked ham, Swiss cheese, pickles, and yellow mustard. Brushing the outside w butter/olive oil and herb mix and then press! So good!

Those sandwhiches look great. Either of you guys ever make monte christo sandwhiches? Years ago I had a room mate that made them. They were amazing. Been a long time since I've had one.

I actually just made some the other day! It’s easy. Whip some eggs and milk like you’re making French toast. Get some good ham and Swiss cheese and grape jelly onto your bread. Dip the sandwich in egg and fry on both sides in butter. Too with powdered sugar and enjoy

For my Cuban pork, I add the juice if 3 oranges and two lemons to a blender. Add a whole head of garlic, half a red onion, 1 tsp each of cumin, oregano, and salt and pepper. 1 tbl chicken base and blend up. Marinate for 48 hours and roast or smoke

They are awesome! Bennigans used to make them deep fried, triple layered. I had the best ones in Reno, NV! Just decadent as hell!
