What foods have you grown to hate because of this lifestyle?

I know this isn’t really on topic but I’ll drop it here anyway
I smoked about 10lbs of chicken this weekend, me and my youngest son ate about 90% of it

I’ll never ever get tired of smoked meats, white dark or beef, season it up and graze on it all day … I could eat this way everyday
You are going to miss the kudu biltong and biltong shops.
There’s one in The Woodlands. Not sure where you are.

Im in DFW so Im north of woodlands 4hrs more or less...I already do miss biltong, its one of my goto snacks in Cape Town. Im currently working on 6months theres and 6 months here, I have a business here or Id already be there full time. The quality of life is so far superior as you well know..
good news is they sell Traeger s in Cape Town, I checked last week hahaha

We will probably be doing between 4-6 months there, starting around this time next year.

Chili bites are my go-to if I can’t get kudu.

 
Im pretty sure you’ve seen my Traeger smoker wood pellet grill for. , Its the only way I cook meat, it taste better than any oven cooked meats and the smoke feature is a whole new level of taste and ease. I put it on early AM and its does before you know it

yesterday I used a cajun rosemary, onion and garlic with, slap ya momma for spice and I drizzle honey all over it

the down side is you can’t stop eating it, your little man and woman will be praising you haha
You definitely showed me that thing, it was incredible. I have absolutely no clue on how to smoke anything, it's sad, lol..
But yet everyone who does it, swears by it..

But I got to be honest, my cooking is definitely not up to par... 😢

I didn't even know what that was, I had to Google it.
I've never ever tried that, is that actually a useful and practical way for cooking?

Oh yeah, it's what I use when cooking larger cuts or more expensive cuts that I don't want to have any chance of over cooking. The meat always comes out moist and flavorful. I'll finish some things in the oven or cast iron.

Would you add seasoning, and sauces to it before you add it in the bag? Do you freeze it or do you put it in the fridge for a little while?
That's my biggest problem is over cooking, that's what I do to my chicken.. because I'm terrified of having it undercooked..

Yes, season it then vacuum seal. As soon as I vacuum seal it goes into the sous vide.

The beauty of the sous vide is you can't over cook it past the temp you set.

like @Wardamn says supposed to make it tender, juiciery more flavorful. im an open flame guy through and through.

ive had the souis vide and while it comes out good, and you can sear it after its super impractical when youre hungry lol.

You definitely can't use it for your current meal, lol. It's a plan ahead way to cook.
