Hey bros,
Didn't want to keep cluttering up the "What Are You Eating Tonight?" thread with my weekly meal preps. I also wanted to have a record to go back to with recipes, what worked/didn't work, etc.
I am by no means a "foodie". My palate is simple but tasty. And I am not a great cook- but I really enjoy coming up with recipes and making them for the week.
Would love for this to be an interactive food log- drop a comment on what works for you or what I should try!
For some reference, I do use some AI tools to help with recipes and to create weekly shopping lists, and prep checklists to make my time in the kitchen most efficient.

Nice, I like it! I agree with @soumikr , that jacked Hamburger Helper looks good. Appreciate you sharing the recipes! Those AI tools definitely come in handy. I use them for logging pretty often.
My go-to meals are pretty basic for breakfast and lunch... eggs, fruit, chicken or fish with rice and veggies. But one of my favorite dishes my wife makes is her goulash. Double or triple up on the beef, throw in some protein noodles, and its a cheap, high-protein meal that'll feed an army.

The jacked hamburger helper came out amazing. It also is one of those meals like spaghetti where I think it tasted better coming out of the fridge.
I made some actual hamburger helper for the family one night, and they said the homemade one was way better- not to mention much healthier!

New recipes coming today!

Any kind of pot meal is better the next day just about. Chili, gumbo, mississippi pot roast, etc. In my opinion anyways. I always tell the kids, the longer it sits the better it gets.

WEEK of 11-1-26
MENU
Meal 1 French Toast Bowl
Meal 2 COR Slop Bowl
Meal 3 Greek Lemon Chicken & Rice Bake
Meal 4 Creamy Pumpkin White Chicken Chili (yes, I'm still loving the basic bitch flavors)
Meal 5.1 Cod, Rice, & Veggies
Meal 5.2 Not Fat Ass McChicken Sandwiches
Meal 6 Ninja Creami

Nice thing about these recipes is you can scale the carbs pretty easily by using regular sourdough, normal burger buns, more rice in the Greek Chicken Bake, and replacing the cauliflower rice with Jasmine in the cod recipe.
My current macros on training days are 250g P 300g C and 45-50g F. Rest days are 210g C.

Recipes

1 Eggs

Cinnamon
3 Slices Sourdough Bread (I use the Keto Sourdough)

Method
1. Preheat the oven to 350 F.
2. In a large bowl, whisk the eggs, egg whites, Greek yogurt, almond milk, vanilla and about half of the cinnamon until smooth.
3. Cut the 3slices of sourdough into cubes. Pour the custard evenly over and mix to coat the bread fully.
