I have used many variations of this. Endless sugar free pudding flavors. I like to use casein in place of whey.

50/50 casein and whey is best in my experience.
I also recently started adding 5-10g of ground up chia and flax seeds. It thickens it up nicely and give a nice boost of omega 3 and micronutrients
