My world famous (at least I like it! Lol) chili verde
I love chili verde. Always have. Probably one of my all time favorite Mexican dishes. You can used canned chili’s to make this recipe....but I’d highly recommend getting some fresh roasted ones from food city. Soooo much tastier. If you must use canned, make sure they’re fire roasted. Here we go...
Ingredients
1 3-4 pound pork butt
1/2 lb green chili’s or 4-5 small cans
4 Roma tomatoes
6-7 good sized tomatillos
6 cloves garlic
1 whole yellow onion quartered
1/2 tsp Garlic powder
1 tsp onion power
1/2 tsp cumin
1/2 tsp oregano
Salt and pepper to taste
2 tbl flour
2 quarts chicken stock
Start by either grilling or charring the tomatoes, tomatillos, garlic in the paper in a skillet until nicely charred and then chop them up
I personally like to roast my pork butt first for extra flavor, but if you don’t want to just cut it up into 1/2 inch cubes.
Add two tbl oil to a large pot. Add your pork (if raw sauté it for several minutes until nicely browned) and then add 2 tbl flour and stir until the flour is no longer white. Add the stock. Toss in all the veggies along with tour chili’s.
Stir and simmer on medium low. If the pork was raw simmer for 1-2 hours. If you roasted it....1/2 to 1 hour will be good.
Fill tortillas with the sauce and some nice cheddar or pour it in a bowl and dip tortillas and enjoy!

Ive made the chili verde with smoked pork before and it’s amazing, but my wife prefers it the traditional wayDamn there's some heat being dropped in here! Going to try the chili verde pork with smoked pork. Smoke it for 2hrs to get some flavor in there then cube it up and cook per recipe. Smoked pork tacos are my favorite and they are great leftovers. I always freeze my leftover pork butt for tacos or enchiladas.
Italian roast beef sandwiches
One of my favorite recipes
Ingredients
1 3-4 pound chuck or round roast
4 cups beef broth
2 packages Italian dressing mix
1.5 tsp each of oregano, onion powder, garlic powder, basil, black pepper
1 tsp salt
1 whole bay leaf
1 jar of pepperonis with some of the juice
Combine it all in a crockpot and cook on low for 6-8 hours
Place on hoagie rolls with your favorite white cheese

Grill roasted Italian porchetta
Butterfly open one pork shoulder roast or sirloin roast
Mix together
1/4 cup chopped fresh rosemary
2 tsp chopped fresh sage
5 mashed garlic cloves
Zest of 1 lemon
1.5 tbl kosher salt
1 tsp fennel seeds
3/4 tsp red pepper flakes
1/2 tsp black pepper
1/4 cup olive oil
Spread onto roast. Roll up tightly and tie with butcher string.
Cook over indirect heat at about 350 until internal temp reaches 180 degrees and enjoy!
This recipe can also be done indoors in the oven
