    Instant pot meal prep for the week.
    3 lbs chicken breast cooked with bell peppers, shiitake mushroom, onion, garlic, ginger, coconut milk, red curry paste and a red curry sauce. Tangerine vinaigrette side salad.

    Do you put the breasts in whole and then shred when done?also do all ingredients go in at the same time?

    Yes, I cook them whole. If the breast are large I will cut them up so they cook more evenly. I use the saute feature to cook the onion, garlic, and ginger. Then add a can of coconut milk and some curry paste. Cook that all together for a few minutes then add the steamer trivet to keep chicken off the bottom. Add chicken on trivet and dump curry sauce bottle on top. Select pressure cook and cook for 12 minutes.
    Once cooked remove chicken and chop on cutting board. Turn pressure cook back on with lid off to reduce the sauce a bit and add back in the chicken and veggies.

    I just use fresh ginger root.

    First time a made this and it was pretty good.

    I like doing 50% beef 50% bison. You ever tried burgers like that? Bison solo is just a bit too lean for my taste.

    No but I will next time lol. It was too lean and wouldn't hold together, even with eggs added in. Definitely adding some beef or ground pork next time

    Exactly. I was wondering how the hell those weren't falling apart lol. I love mixing different meats especially for chili. 2lbs turkey 1 lb beef 1lb pork is delicious.

    They did lol. It was a massive pain in the ass to grill. Had to spray them with evoo then flip until they got decently done

    Can also cook as patties or however or just chop it up and cook it like ground beef then use in pasta! Very good.

    Healthy with a homemade sauce made with tomatoes, onion, bell pepper, mushrooms, garlic, and any other veggies you enjoy!
