NEW RECIPE FOR THE MORNING MACROS!!

BUCKWHEAT PROTEIN PANCAKES RECIPE
Ingredients
* 3 tbsp buckwheat flour
* 2 tbsp flavoured protein powder – I prefer simple flavors like vanilla, chocolate or salted caramel in these pancakes but use whatever you like!
* 1/2 tbsp coconut flour
* 1/2 tsp baking powder
* 1/4 tsp cinnamon –
* 1 egg
* 1/3 cup carton (drinking) coconut milk – or any other milk of choice e.g. almond milk, or my Favorite: Fairlife
* olive oil, butter or coconut oil for frying

Instructions
* Place buckwheat flour, protein powder, coconut flour and baking powder (and cinnamon, if using) in a mixing bowl and lightly whisk them together.

* Add the egg and coconut milk to the same mixing bowl. Whisk the ingredients together until they start to form a smooth batter, which should be the consistency of a thick custard.

* Heat a small nonstick pan up to a low heat on the stove. Add a teaspoon of olive oil/coconut oil/butter. Scoop in about two heaped tablespoons of the batter, gently smoothing it out a little to form a pancake shape.*

* Cook for approximately 1.5 – 2 minutes, or until a few bubbles poke through the surface, then flip and cook for another minute. (You want to flip them as soon as you are able to, to avoid burning).*

* Repeat the process with the remaining batter; you should make 4-5 small pancakes. Add a little extra oil to the pan as needed as you cook as needed

To Increase Calories/Macros; Toppings to Add:

I could eat an entire loaf of Italian bread when I make meatballs and pasta, plus I live to dip the bread in EVOO with all kinds of seasonings. The next morning tho I can see and feel the bloat from all that bread.

Monday was a long workday/night. My schedule is still so odd. Had some fun though, all girls class. Lol. Hope everyone is taking advantage of the fresh, clean slate and staying safe. The cold weather tends to be when people stay indoors and some get the blues. Best cure is exercise and outdoor adventures. I went hiking, just 12.4 mi. but it was super scenic and I of course brought the Big ass Max Burritos and some pwo powder/electrolytes with water. One rule I have is: if I am doing any sort of calorie burning adventures and I am not trying to lose muscle: I have to eat !! Turns out 12.4 miles was nothing....until the next day. My hiking boots were not completely broken in! My feet felt like I had walked on sharp Jetty Rocks !! Ouch!! Definitely got too much color! I wore a hat and mask too! Looks funny. Anyway....

Indeed I did. I always throw stuff out there! LOL. Don’t get me started on Pasta Talk! If I could only eat 2 things it would be bread and Pasta!! Probably because I don’t eat a lot of the two! I love em both; just gotta watch it. I am a huge eater. The Rocks cheat meals have nothin on me!

This is my first time ever that I have drastically cut back my intake on bread and carbs, and I can't make this up, when I was in the pasta and bread aisle the other day in the store I could smell the carbohydrates. I can't begin to tell you how it made me feel.
When I cook my rice now I'm overwhelmed with temptations and the thought of taking heaping spoonfuls..but noooooo..
