I eat a lot of pork. I lean toward Boston Butts and Pork shoulders as that's where all the flavor and tenderness is. 8-10 hours in a crock pot and I'm good to go.
You want to try something that will knock your socks off? Put a pork shoulder in the crock pot with a bottle of mojo criollo marinade (Goya) and let it cook on low for 8-10 hours. You'll thank me later.
I can't stand lean cuts of pork, too dry for me, and doesn't refrigerate/reheat well.
I mostly just quick-fry butterfly chops. I eat the leftovers cold. Lean and easy. Yours sounds tastier but I ain't got time for that.
