    You can sub out the beer in the mustard bbq for a 1/2c water to reduce calories to almost nothing

    Another homemade hot sauce recipe, this time for red sauce made with arbol chilis. It's a boy of a pain but well worth it

    Arbol Hot Sauce

    7.5oz package dried arbol chilies
    1 tbsp sea salt
    4c water
    1c distilled white vinegar


    Wearing gloves, separate the stems from the chilis. Break in half and roll between fingers to remove the majority of seeds. Rinse chili's in colander. Place chili's in pot and add water and salt. Bring to boil, reduce heat and simmer covered for approx 15 minutes. Remove lid and simmer for another 20-30 minutes. Remove from heat and let cool until warm. Place in blender and puree for about 30 seconds. Transfer to a glass bowl and add vinegar. Cover tightly and allow to steep for 18-24 hours.

    Set a coarse strainer over another large bowl, and get a larger rubber spatula. Strain pureed chili mixture through, using the spatula to press the mixture through to separate the liquid and finer parts from the seeds and skin. Continue pressing mixture through until only a thick paste or peels and seeds remain. Discard the paste. Transfer the sauce into sealed containers, I prefer using grolsch style beer bottles since they seal well and don't have metal caps (metal caps react with the vinegar and has a bad taste). Allow to rest at room temperature for another day, then place in the fridge. Keeps pretty much indefinitely

    HERBED BALSAMIC CHICKEN (29 mins or less)

    • 1/2 cup balsamic vinegar
    • 3 tablespoons extra virgin olive oil
    • 1 tablespoon minced fresh basil
    • 1 tablespoon minced fresh chives
    • 2 teaspoons grated lemon peel
    • 1 garlic clove, minced
    • 3/4 teaspoon salt
    • 1/4 teaspoon pepper
    • 6 boneless skinless chicken thighs (1-1/2 pounds)


    DIRECTIONS
    ~ Whisk together all ingredients except chicken. In a bowl, toss chicken with 1/3 cup vinegar mixture; let stand 10 minutes.
    ~ Grill chicken, covered.
    ~ Drizzle with remaining vinegar mixture before serving. Yield: 6 servings.

    245 calories, 15g fat (3g saturated fat), 76mg cholesterol, 358mg sodium, 6g carbohydrate (5g sugars, 0 fiber), 21g protein.

    Takes practice and sense of timing- I ruined a few batches before I got the hang of it- once you conquer it - theres nothing like grilling - GarlicChicken clearly knows what he's doing
