Honey Mustard Chicken

~5 lbs chicken meat
4-5 broccoli florets
4-5 zucchini/grey squash
6-7 cloves garlic, peeled & crushed
Water chestnuts (opt)

Sauce:
2 tbsp corn starch
1/8c undiluted chicken stock
1/8c water
1/2 lime juice
5 tbsp Dijon mustard
2 tbsp natural peanut butter
3 tbsp honey
3 tbsp soy sauce
1 tbsp sesame oil
1 tbsp cock sauce (Sriracha)
~1 tsp fresh, finely ground black pepper
2 tsp sea salt

Cut chicken into small chunks ~1-2". Fry in about 1 tbsp sesame oil until cooked through. Retain ~1/8c stock and place stock in small mixing bowl. Place chicken to the side.

Mix all sauce ingredients with the stock in small mixing bowl. Lime juice will help dissolve solidified honey and peanut butter. Taste sauce, add more seasonings if desired.

In large wok, fry vegetables and garlic in sesame oil until almost desired doneness. Add chicken in and heat until hot. Add sauce to wok, cook 2-5 minutes, stirring, until sauce cooks slightly and smell changes somewhat.

Serve straight or with rice.

Chipotle chicken copy cat recipe with basmati rice and pinto beans.... it was supposed to have grilled bell pepper but I forgot to grill them when I was grilling... I’ll roast them and add them tonight.

I'm assuming CWD isn't a big problem in your area of the woods? Judging by the doneness of the meat lol

Fortunately as of 2016 we had 0 reported cases of CWD. I’m hoping it stays that way.
It’s the Ticks you gotta watch out for. LOL.
