Always trying to mix it up. I have 5 in my family and it is hard to cook for them and me, as they are picky. Here is something everyone eats.....Chicken Pot Pie.

I always steam the veggies, they taste better. Or better yet every once in a while I will roast them.

Agree, when my kids bail out to eat with their friends I put other veggies in as well. It's hard to cook 1 meal for all of us, particularly when I dial in my diet, which is over the next couple of months.

Looks awesome. I need to try this to change things up a bit. How long to cook? What temp?

For the most part everything is cooked before it goes in the oven, so it's easy. Pre cook the bottom of pastry pie dough 5 minutes, dump all your veggies in the bottom. Use a little flour and half & half in the low sodium chicken broth to thicken it, pour over veggies and chicken, put the top layer pie shell on and cook 20 minutes at 350 degrees.

Its great to mix it up and put all types of veggies in it. My kids are picky, so if there eating, I stick with potatoes, carrots, celery, onion and peas. Taste great, easy and it's good for you.

Home made chicken pot pie is freaking fantastic once you figure out how to get it just right.

When I make mine I use potato, carrots and celery.
